Job Brief

We are looking to recruit an Executive Sous Chef eager to develop, produce, and grow with an exciting brand with a high volume and elevated space that is looking to change the culinary experience in the East Africa region! The successful candidate will be responsible for the daily operations and the back of house functions in all Food and Beverage outlets. This position will support and work alongside the Executive Chef in all activity throughout the property including training, menu planning, overseeing product purchasing and managing the culinary budget.

Job Brief

We are looking to recruit an Executive Sous Chef eager to develop, produce, and grow with an exciting brand with a high volume and elevated space that is looking to change the culinary experience in the East Africa region! The successful candidate will be responsible for the daily operations and the back of house functions in all Food and Beverage outlets. This position will support and work alongside the Executive Chef in all activity throughout the property including training, menu planning, overseeing product purchasing and managing the culinary budget.


  • Supervise Chefs and food preparation workers in all Food and Beverage outlets

  • Conduct daily walk-throughs of areas to ensure full compliance of HACCP regulations and enforce quality control of products

  • Preparation and analysis of financial forecasts, budgets and goals

  • Participate in selection and recruitment of Kitchen staff

  • Training and development of Chefs, Cooks and Kitchen Stewards in all outlets

  • Work closely with the Stewarding department to monitor cleanliness of all back of house areas, equipment, and dining ware

  • Ensure that all recipes and product yields are accurately costed and reviewed regularly

  • Ensure that food stock and par levels within the department and stores are of high quality and meet forecasted needs based on occupancy

  • Ensure that meetings are organized, agendas are laid out, and tasks are completed on time

Requirements

  • At least a Degree or Diploma in Culinary Arts/Food Production or its equivalent

  • At least 5 years of experience with last 2 as an Executive Sous Chef in a similar operation or equivalent

  • Previous experience working in a large, luxury property setting preferred

  • Previous experience in buffet, catering, banquet operation(s) and fine dining

  • Previous experience managing a multi-outlet operation preferred

  • Ability to write routine reports, purchase orders, menus and correspondences

  • Excellent customer services skills

  • Ability to successfully lead and mentor a team

  • Ability to obtain & maintain full knowledge and understanding of company and department rules and regulations, policies and procedures.

  • Fluency in more than one language an added advantage
