Job Brief
The Food & Beverage Manager is responsible for the strategic initiatives of the Food & Beverage Service Department tied to business expansion, growth, and the necessary cultural evolution to support both. He/she is expected to support all aspects of the hotel’s activities and initiatives maximizing the overall revenue of the hotel.

Job Brief
The Food & Beverage Manager is responsible for the strategic initiatives of the Food & Beverage Service Department tied to business expansion, growth, and the necessary cultural evolution to support both. He/she is expected to support all aspects of the hotel’s activities and initiatives maximizing the overall revenue of the hotel.
- Manage all F&B and day-to-day operations within budgeted guidelines and to the highest standards
- Preserve excellent levels of internal and external customer service
- Together with Executive Chef design exceptional menus and continuously make necessary improvements
- Drives together with the Executive Chef, Director of Sales and Marketing all events in the outlets/conferencing/hotel as per the annual promotions calendar
- Identify customers needs and respond proactively to all of their concerns
- Lead F&B team by participating in recruitment, training and appraisal of talent
- Provide a two way communication and nurture an ownership environment with emphasis in motivation and teamwork
- Report on management regarding sales results and productivity
- Monitors all F&B par stocks and initiates spot checks on expiry dates of all items in the F&B Department
- Monitors on breakage, costs and expenses and ensure proper handling of all FF&E and
operating equipment - Ensure that the hotel always complies with local health authority regulations
- Controls and approves all F&B payroll related documents, prior to their submission to
the HR Department within stipulated timelines - Keeps self-updated on all business activities of equal competitors and changing industry trends
- Working proactively to maximize guest satisfaction and comfort, delivering a positive and responsive approach to enquiries and problem resolution
- Develops and implements strategies where key F&B metrics are identified, communicated and delivered where reports and tracking tools are effectively maintained in line with defined initiatives & targets
- Establish targets, KPI’s, schedules, policies and procedures
- Build and maintain effective working relationships with all key stakeholders and partners both internal and external ensuring all communications/activities are controlled and undertaken in a timely manner.
- Review and scrutinize the performance of the F&B Department, providing recommendations that will drive financial performance, including working with internal and
external partners on ad-hoc projects. - Establishes and delivers effective programs that advances service standards,
profitability and cost control which may include working with internal and external stakeholders as required, whilst incorporating environmental concerns - Maintains and operates F&B equipment at optimum effectiveness, efficiency and safety
Bachelors Degree in Business/Hospitality Management or its equivalent
7+ years of experience with the last 3 in a similar role, preferably in a luxury hotel environment with proven track record
Strong problem-solving capabilities with the ability to adapt to changing environments
Excellent leadership skills with a hands-on approach and lead-by-example work style
Commitment to exceptional guest service with a passion for the hospitality industry
Ability to find creative solutions, offering advice and recommendations
Personal integrity, with the ability to work in an environment that demands excellence, time and energy
Strong communication and listening skills, excellent speaking, reading and writing skills
Outstanding analytical and strategic skills improving the business from a financial perspective
Excellent ability to work collaboratively across functions and cultures in a global environment
Skilled with Microsoft Office software, especially in Excel
Proficiency in POS systems as well as an understanding of PMS systems
An open, positive and communicative personality
Ability to handle multiple challenging priorities and assignments
